PREP TIME: 15 minutes

COOK TIME: 38 minutes



• 1/4 cup butter, softened

• 4 large eggs

• 1½ teaspoons vanilla extract

• 1½ teaspoons coconut extract (if you don’ t have coconut, use more vanilla)

• 3/4 cup granulated sugar

• 1 cup sweetened coconut flakes

• 2cups 2% or whole milk

• ½ cup pancake mix (Bisquick)



1. Spray 9-inch round pie plate.

2. In a large bowl, whisk together butter, eggs, sugar, and extracts.

3. Add coconut and whisk for 1 minute.

4. Add milk, whisk to mix. Add pancake mix and make sure to whisk until well mixed.

5. Pour batter, which will be very Thin, into prepared pie plate.

6. Cook at 285°F for 38 min Store pie in refrigerator.
